Swine Divine
we’re back !
after an incredible trip to basque region in spain - 2 weeks with 6 friends - lots of food wine & laughs. mountains ocean & adventures. but where do i begin with the food ?
well i guess at the beginning with our first meal -

in the magical hilltop city of segovia (marked by this 2000 yr old roman aqueduct - contructed without mortar. fascinating ).
ok. back to food. tonight we dine at reputable jose maria. this is our friend rick’s ‘must eat at” place when he is anywhere near madrid. and now i know why. this is a typical castillian restaurant serving segovian specialty - the suckling pig. ( jose is serious about his piglets and raises his own).


jose is also serious about local wine and owns vineyards on the banks of the ribera del duero. we start with a round of his crianza - reserva and gran reserva.

well you just have to smile ! in anticipation.

the tableside production of cutting and serving. lots of banging spoon on plate and plate on plate and mumbling something in spanish.

it doesn’t get better than this. wood fired - milk fed - certified segovian.

creamy creamy giant white beans - cooked ‘cocido’ and served from the ceramic pot - patatas fritas and green salad round out the meal.

exceptional desserts. a ‘cake’ filled with whipped custard with cinnamon espresso icecream and ewe’s milk curd with lavender honey in pastry cups.
